Assorted Bell Peppers

UNSTUFFED PEPPERS RECIPE

Time: approximately 30-40 minutes

Level: Easy

bottle of olive oil, ground beef, mozzarella cheese, chopped peppers, rice, chopped onions, Worcestershire sauce, tomato sauce, and spices

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 3 bell peppers (any color: orange, red, yellow, green) chopped
  • 1/2 cup onion, chopped
  • 1 pound ground beef
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup rice or 12 oz. bag of frozen cauliflower rice 
  • 2 cups of tomato sauce
  • 1 cup shredded mozzarella cheese (and more if desired)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.  
  2. Add the peppers and onions and cook until soft.  (about 7-9 minutes) 
  3. Put peppers and onions in a separate bowl and set to the side.
  4. Stir in the beef and cook until browned. 
  5. Add Worcestershire, Italian seasoning, garlic powder, and onion powder and stir to combine.
  6. Stir in rice (if using frozen cauliflower cook until tender).
  7. Spoon peppers and onions back into the skillet.
  8. Pour in tomato sauce and stir well.
  9. Sprinkle in cheese and mix thoroughly.
  10. Serve and sprinkle on more cheese, if desired.
