MARINATED LONDON BROIL

INGREDIENTS:

  • 2 pounds London broil
  • ¾ cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 2 teaspoons brown sugar
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground ginger

INSTRUCTIONS:

  1. Place London broil into a large baking dish or Pyrex bowl.
  2. In a medium sized bowl, whisk together all of the marinade ingredients (soy sauce, balsamic vinegar, Worcestershire sauce, olive oil, lemon juice, Dijon mustard, garlic, brown sugar, Italian seasoning, and ginger).
  3. Pour marinade over the meat and flip it to coat.
  4.  Put the meat in the refrigerator and let marinate for at least 4 hours. If possible, occasionally flip the meat in the marinade to ensure the whole piece of meat gets coated.
  5. Remove the meat from the marinade and place on a cutting board. Pat the meat dry and let sit out and get to room temperature (approximately 30 minutes).
  6. Using a broiler pan (not a baking pan), broil the meat on high in the oven for 5 minutes. Flip and broil another 5 minutes.
  7. Remove meat and let rest for 10 minutes.
  8. Slice meat diagonally across the grain.

Note: If you have a meat thermometer, the following temperatures are a guideline for how you determine when the meat is done and to your liking.

  • 125-130°F for rare
  • 135°F for medium-rare
  • 145°F for medium
