
ONE-POT SAUSAGE AND VEGGIE PASTA

INGREDIENTS
- 1 tablespoon extra virgin olive oil
- 1 (14 ounce) package Italian sausage, cut diagonally into 1/4-inch slices
- 1/2 cup frozen corn
- ½ medium yellow onion, diced
- 8 ounce box of any type of short pasta (I used cavatappi)
- 3 cups low sodium chicken broth
- 4 cups packed baby spinach
- 1/3 cup grated parmesan cheese

INSTRUCTIONS
- Heat the olive oil in a large sauce pot over medium-high heat. When the oil is hot, add the sausage. Cook for 4-6 minutes, turning occasionally to brown on all sides.
- Add the frozen corn and onion and sauté for 10 minutes.
- Add the pasta and broth. Bring to a boil.
- Once water is boiling, lower stovetop to medium and simmer for 10 minutes.
- Stir occasionally to prevent pasta from sticking to the bottom of the pot.
- Remove from the heat. Add the spinach and stir until the spinach has wilted.
- Stir in the parmesan cheese.
- Serve and enjoy!
