CREAMY CHICKEN FLORENTINE

INGREDIENTS
- 1 pound boneless skinless chicken breasts, cut into one inch cubes
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 cup sun-dried tomatoes
- 8 ounces mushrooms, sliced
- 1 tablespoon flour
- 1 1/2 cups chicken broth or chicken bone broth
- 1 cup half-and-half
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 8 ounces pasta of your choice
- 1/4 cup Parmesan cheese
- 2 cups fresh baby spinach
INSTRUCTIONS
- In a cooking pot or large skillet over medium-high heat add the olive oil and cook the chicken until no longer pink. (approximately 10 minutes)
- Add the garlic, sun-dried tomatoes, and mushrooms and cook until softened. (approximately 5-8 minutes)
- Add in the flour and cook for another minute.
- Add the salt, garlic powder, and pepper.
- Slowly add the chicken broth and half-and-half. Whisk until incorporated.
- Add the pasta and bring to a simmer. Then cover and cook for 10-15 minutes or until the pasta is tender.
- Remove from the stovetop and add the Parmesan cheese and spinach. Stir until the spinach starts to wilt.
- Serve and enjoy!
