CROCKPOT BEEF WITH BROCCOLI

I’ve always loved Chinese food—the bold flavors, the savory sauces, the perfect balance of textures. But as much as I crave takeout favorites like beef and broccoli, I often find myself hesitating because of all the added sugars, sodium, and mystery ingredients that come along with it. It’s delicious, but not always the kind of food that leaves me feeling my best afterward.

That’s why I started making my own version of beef and broccoli at home using cleaner, more wholesome ingredients. By using quality cuts of beef, low-sodium soy sauce, fresh garlic, and skipping the excess oil and sugar, I can recreate those comforting flavors I love—without the guilt. It’s simple, satisfying, and a great way to enjoy a classic dish that supports how I want to feel.  Oh, and did I mention that all you have to do is throw everything in a crockpot? Who doesn’t love a meal that is incredibly easy and perfect for busy days when you want something satisfying without spending hours in the kitchen?


PREP TIME: 10 minutes

COOK TIME: 8-10 hours

Servings: 4-6


INGREDIENTS

  • 2 pounds chuck steak
  • 1 cup beef broth (regular or low-sodium)
  • 1/2 cup soy sauce
  • 1/4 cup hoisin sauce
  • 1/4 cup brown sugar
  • 3 garlic cloves, minced
  • 2 teaspoons sesame oil
  • 2 tablespoons of cornstarch
  • 1 pound frozen broccoli
  • 1 cup cooked rice (white, brown, or cauliflower)

INSTRUCTIONS

  1. Add steak, broth, soy sauce, hoisin sauce, brown sugar, garlic, and sesame oil to the crockpot. Stir to combine.
  2. Cook on low for 8 hours.
  3. After 8 hours, check the beef to make sure it is tender and fully cooked through.
  4. Add the broccoli and continue cooking on low for an additional 30 minutes or until broccoli is tender. 
  5. Once the broccoli is cooked, begin shredding beef while it is in the crockpot.
  6. Reserve 1/4 cup of cooking liquid from the crockpot. Using a measuring cup or bowl, whisk 2 tablespoons of cornstarch with the reserved liquid. 
  7. Slowly stir the cornstarch mixture into the crockpot so the sauce thickens. Let it cook for an additional 10 minutes to fully thicken. 
  8. Serve over cooked rice and enjoy!
