
GRILLED NEW YORK STRIP STEAKS
PREP TIME: 5 minutes (plus 2 hours if you are able to let it sit in the refrigerator)
COOK TIME: Approximately 12 minutes
OVERALL TIME: a little less than 20 minutes (or 2 hours and 20 minutes if able to refrigerate)
Servings: 3-4
INGREDIENTS
- 2 (20 oz.) New York strip steaks (approximately 1 1/2- 2 inches thick)
- 1 tablespoon olive oil
- 1 tablespoon of Kosher salt
- 1/2 tablespoon of pepper
- 2 teaspoons brown sugar
- 2 teaspoons ground coffee
- 1 teaspoon granulated garlic
- 1/2 teaspoon chipotle chili powder
- 4 tablespoons of butter, divided

INSTRUCTIONS
- Pat the steaks dry with paper towels and then set aside.
- In a shallow dish, combine salt, black pepper, brown sugar, coffee, garlic, and chipotle chili powder. Mix the seasonings thoroughly.
- Using a basting brush, baste the steaks with the olive oil.
- Rub the steaks in the spice mix, covering them on both sides. Set steaks aside on a dish.
- Cover the dish and, if possible, refrigerate for at least 2 hours to allow the flavors to get into the meat.
- When ready to cook, set stovetop to medium-high heat and add 2 tablespoons of butter to a skillet.
- Once butter melts, cook steaks for approximately 6 minutes on one side and then flip. Add another 2 tablespoons of butter and cook the other side for another 6 minutes.
- Remove steaks from skillet and let the meat rest for 5 minutes.
- Serve and enjoy!
