MARINATED LONDON BROIL

INGREDIENTS:
- 2 pounds London broil
- ¾ cup soy sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 3 cloves garlic, minced
- 2 teaspoons brown sugar
- 1 teaspoon Italian seasoning
- 1/2 teaspoon ground ginger
INSTRUCTIONS:
- Place London broil into a large baking dish or Pyrex bowl.
- In a medium sized bowl, whisk together all of the marinade ingredients (soy sauce, balsamic vinegar, Worcestershire sauce, olive oil, lemon juice, Dijon mustard, garlic, brown sugar, Italian seasoning, and ginger).
- Pour marinade over the meat and flip it to coat.
- Put the meat in the refrigerator and let marinate for at least 4 hours. If possible, occasionally flip the meat in the marinade to ensure the whole piece of meat gets coated.
- Remove the meat from the marinade and place on a cutting board. Pat the meat dry and let sit out and get to room temperature (approximately 30 minutes).
- Using a broiler pan (not a baking pan), broil the meat on high in the oven for 5 minutes. Flip and broil another 5 minutes.
- Remove meat and let rest for 10 minutes.
- Slice meat diagonally across the grain.
Note: If you have a meat thermometer, the following temperatures are a guideline for how you determine when the meat is done and to your liking.
- 125-130°F for rare
- 135°F for medium-rare
- 145°F for medium
