ONE-POT SAUSAGE AND VEGGIE PASTA

COOK TIME: 30 minutes

OVERALL TIME: 40 minutes

INGREDIENTS

  • 1 tablespoon extra virgin olive oil
  • 1 (14 ounce) package Italian sausage, cut diagonally into 1/4-inch slices
  • 1/2 cup frozen corn
  • ½ medium yellow onion, diced
  • 8 ounce box of any type of short pasta (I used cavatappi)
  • 3 cups low sodium chicken broth
  • 4 cups packed baby spinach
  • 1/3 cup grated parmesan cheese

INSTRUCTIONS

  1. Heat the olive oil in a large sauce pot over medium-high heat. When the oil is hot, add the sausage. Cook for 4-6 minutes, turning occasionally to brown on all sides.
  2. Add the frozen corn and onion and sauté for 10 minutes.
  3. Add the pasta and broth. Bring to a boil.
  4. Once water is boiling, lower stovetop to medium and simmer for 10 minutes.  
  5. Stir occasionally to prevent pasta from sticking to the bottom of the pot.
  6. Remove from the heat.  Add the spinach and stir until the spinach has wilted.
  7. Stir in the parmesan cheese.
  8. Serve and enjoy!
